How difficult is it to learn how to bake? I'd like to learn how to make bread.

Like everything it takes time to learn to do it well, but if you just want to be passable then it is not so hard to learn what not to do when baking bread.

What shouldn't you do?

You shouldn't switch out the type of flour the recipe calls for, for example. A lot of people thinks it doesn't matter and that you can just switch it around however you want, but different types of flour have different effects and so the volume would need to be adjusted beforehand.

It's also very important to measure your ingredients carefuly, unlike most cooking you can't really play it by ear without ruining the dough.

Don't add too much water too quickly to your dough, it's easier too add more later if it ends up too dry than to try to save one that's ended up being too wet.

These are just a few tips on what not to do. I'd also reccomend keeping notes while you bake, that is a great way to keep track on both mistakes made and your successes.
