I know plenty of people with pale or white hair. The red eyes not so much.

Yeah it's gotta be all three to be considered albinisim. It's a complete lack of pigmentation in the skin, hair and eyes.

It's what gives your skin, hair, and eyes colour. The more pigment, the more colour in each. Theres more to it than that, but that's the general rule.
