Bingo. Tacos = sandwiches. Now I think of filled buns... they could also be sandwiches.
If I fill a cornbread bun with jambalaya? Nawlins Sandwich.

I'd have to modify my cornbread recipe to make that possible. Jambalaya isn't a dry food, after all. The cornbread would turn to mush.

I'd suggest gumbo, but that's more for a thermos than contained inside of bread. Sadly, we're lacking in those here.
